Buttered Toffee Apple Pie
Ingredients
Pie Crust
(store bought also works)
2 cups All-Purpose Flour
1/4 tsp. salt
1 cup unsalted butter (cold)
3 - 8 Tbsp. water
Filling
1/2 cup light corn syrup
3 Tbsp. granulated sugar
1 Tbsp. melted butter
1 Tbsp. corn starch
1-1/2 tsp. ground cinnamon
1/2 tsp. salt
6 tart apples peeled & sliced
Topping
1/2 cup + 2 Tbsp. dark brown sugar
1/4 cup chopped walnuts
3 Tbsp. light corn syrup
3 Tbsp. melted butter
2 Tbsp. All-Purpose Flour
Directions
Pie Crust
Put flour & salt into a large bowl. Cut in butter until mixture is coarse and crumbly.
Sprinkle in water 1 Tbsp. at a time mixing with a fork until a soft dough forms.
Divide dough in half and shape into two separate balls. Cover and refrigerate until needed.
Pie
Mix corn syrup, sugar, butter, cornstarch, cinnamon, and salt in large bowl.
Add apples, mix well.
Heat oven to 425°F. Roll out one ball of dough on a well-floured surface to fit a 9" pie pan.
Fit rolled dough into pan and fill with apple mixture.
Roll out remaining ball of dough for top crust.
Seal & flute edges. Make four slashes for steam vents.
Bake at 425°F for 10 minutes. Reduce temperature to 350°F and bake until crust is golden (about 30 more minutes).
Topping
Mix ingredients in a small bowl.
Pour topping over pie.
Return to oven for 5 minutes.
Cool on wire rack. Serve warm.
