Ingredients

  • 1-1/2 cup Flour
  • 3.4 oz. Instant Lemon Pudding Mix
  • 1/2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1 cup Sugar
  • 3 Eggs
  • 2 Tbsp. softened butter
  • 1 tsp. Vanilla
  • 2 tsp. Lemon Extract
  • 1/3 cup Fresh Lemon Juice
  • 1/2 cup Oil
  • 3/4 cup Plain Greek Yogurt or Sour Cream
  • Zest of 1 Lemon
  • 1 cup Blueberries - fold into batter

Frosting

  • 3 Tbsp. Softened Butter
  • 1-1/2 cup Powder Sugar
  • 3 Tbsp. Lemon Juice
  • 1 tsp. Lemon Extra

Directions

  1. Combine dry loaf ingredients.
  2. Combine wet loaf ingredients.
  3. Mix wet and dry loaf ingredients and fold blueberries into the batter.
  4. Bake for 350°F for 55 minutes.
  5. Mix frosting ingredients and drizzle over loaf when cool.
