Starbucks Lemon Blueberry Loaf
Ingredients
1-1/2 cup Flour
3.4 oz. Instant Lemon Pudding Mix
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 cup Sugar
3 Eggs
2 Tbsp. softened butter
1 tsp. Vanilla
2 tsp. Lemon Extract
1/3 cup Fresh Lemon Juice
1/2 cup Oil
3/4 cup Plain Greek Yogurt or Sour Cream
Zest of 1 Lemon
1 cup Blueberries - fold into batter
Frosting
3 Tbsp. Softened Butter
1-1/2 cup Powder Sugar
3 Tbsp. Lemon Juice
1 tsp. Lemon Extra
Directions
Combine dry loaf ingredients.
Combine wet loaf ingredients.
Mix wet and dry loaf ingredients and fold blueberries into the batter.
Bake for 350°F for 55 minutes.
Mix frosting ingredients and drizzle over loaf when cool.
